Apricot and Almond Slice

Description

Ingredients

  • 1/2 cup almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • Pinch of sea salt
  • 1/4 cup almond butter
  • 1/2 cup dried apricots  (organic/sulfur free)
  • 1 tsp vanilla extract
  • 2 Tbsp coconut oil, melted

Directions

  1. Soak the apricots in boiling water for 5 minutes to soften them
  2. Drain
  3. In a blender or food processor blend together all of the ingredients
  4. Press the mixture into a lined container and
  5. Freeze for 30 – 60 mins before slicing.

Notes

Store in the freezer or fridge.
