Yummy Savoury Muffins

Description
Ingredients
- 2 teaspoons coconut oil
- 1 onion, finely diced
- 1 cup kale leaves, chopped finely
- 500gm beef mince grass fed or organic preferable
- 2 eggs / to make egg free, use an additional 1⁄4 cup pumpkin puree (peel, deseed and roast chunks of pumpkin until soft , then puree)
- 1⁄2 cup sweet potato or puree (peel, chop into chunks and roast sweet potato with coconut oil until soft , then puree)
- 1⁄4 cup pine nuts
- 1 large handful parsley, chopped
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- salt and pepper
- 1⁄4 grated zucchini or chopped capsicum
Directions
- Grease (with coconut oil) or line (with non-bleached paper cups) an 8-cup muffin tray
- Preheat oven to 160 degrees C.
- Heat oil in a large frying pan and sauté onion until soft .
- Add kale and cook for 3 more minutes.
- Place in a bowl with mince, eggs, sweet potato puree, pine nuts, parsley, spices, optional extra corn or peas, salt & pepper.
- Mix well.
- Press mixture firmly into muffin tin and

Notes
Enjoy by themselves, or serve with extra sautéed veg or fresh baby spinach and avocado.
