Ingredients
- 5 eggs
- ½ cup honey (I find it blends well if it’s heated or runny)
- ¼ cup coconut oil
- 1 tsp vanilla essence
- 1 cup tapioca flour
- 2 Tbsp cinnamon
- ¼ tsp sea salt
- ½ cup raisons
- 1 tsp bicarb
- 1 tsp baking Powder (or I experimented with 3 tbsp yoghurt mixed with another 1 tsp bicarb and this made it nice and moist)
Directions
- Blend wet ingredients with beaters and then add in the mixed dry ingredients.
- Fold in the raisins or dates.
- Bake for 180 degrees for 45minutes
