Ingredients

  • 5 eggs
  • ½ cup honey (I find it blends well if it’s heated or runny)
  • ¼ cup coconut oil
  • 1 tsp vanilla essence
  • 1 cup tapioca flour
  • 2 Tbsp cinnamon
  • ¼ tsp sea salt
  • ½ cup raisons
  • 1 tsp bicarb
  • 1 tsp baking Powder (or I experimented with 3 tbsp yoghurt mixed with another 1 tsp bicarb and this made it nice and moist)

Directions

  • Blend wet ingredients with beaters and then add in the mixed dry ingredients.
  • Fold in the raisins or dates.
  • Bake for 180 degrees for 45minutes
