I just felt like something different tonight. I made these quick and easy rice paper rolls with leftovers for tomorrow of course 😜
I really enjoyed the freshness of this after breaking away from the more winter type meals. I experimented with a dipping sauce too. A good way to use up leftover ingredients in the fridge which I’m all about 🙏🏽
Directions
Sauce
- 3 tbsp almond butter (could use peanut if you wanted, almond less reactive)
- 1 Tbsp coconut aminos sauce
- pinch of stevia (the real kind)
- juice of one lemon or lime
- 2-3 tbsp warm water
Fillings
- Shredded leftover organic roasted chicken
- coriander
- lettuce
- carrot
- cucumber
- capsicum
- spring onion
