Chicken Chow Mein

Description

Ingredients

  • 1 tsp coconut oil
  • 2 x chicken breast
  • 1 small red onion, sliced
  • 1 carrot, sliced
  • 2 cups of cabbage, sliced
  • 1 red capsicum, sliced
  • 1 courgette, sliced
  • 2 garlic cloves, crushed
  • 2 Tbsp tapioca flour or cornflour
  • 1/2 cup chicken stock or bone broth
  • 2 Tbsp tamari sauce
  • 60g dried vermicelli rice noodles
  • 1/4 cup cashew nuts

Directions

  1. Soak the rice noodles in boiling for for about 3 minutes.
  2. Slice the chicken into thin pieces and add to a hot pan with a little coconut oil.
  3. Cook until the chicken turns white and it cooked through. Set aside.
  4. Heat the coconut oil in a large pan and add the onion.
  5. Stir for 2 minutes on medium heat.
  6. Add the rest of the vegetables and continue cooking.
  7. Add the tapioca flour or cornflour and cook for 1 minute.
  8. Add the stock or broth, tamari sauce, cooked rice noodles and cashew nuts.
  9. Heat through and allow the sauce to thicken before serving.
