Chicken Chow Mein

Description
Ingredients
- 1 tsp coconut oil
- 2 x chicken breast
- 1 small red onion, sliced
- 1 carrot, sliced
- 2 cups of cabbage, sliced
- 1 red capsicum, sliced
- 1 courgette, sliced
- 2 garlic cloves, crushed
- 2 Tbsp tapioca flour or cornflour
- 1/2 cup chicken stock or bone broth
- 2 Tbsp tamari sauce
- 60g dried vermicelli rice noodles
- 1/4 cup cashew nuts
Directions
- Soak the rice noodles in boiling for for about 3 minutes.
- Slice the chicken into thin pieces and add to a hot pan with a little coconut oil.
- Cook until the chicken turns white and it cooked through. Set aside.
- Heat the coconut oil in a large pan and add the onion.
- Stir for 2 minutes on medium heat.
- Add the rest of the vegetables and continue cooking.
- Add the tapioca flour or cornflour and cook for 1 minute.
- Add the stock or broth, tamari sauce, cooked rice noodles and cashew nuts.
- Heat through and allow the sauce to thicken before serving.
