Brekkie Omelettes

  • 2 eggs
  • Seasonal veg of choice (kale, spinach, zucchini, asparagus, mushrooms, tomato, spring onion)
  • Seasonal herbs of choice (basil, parsley, coriander, garlic, chives)


  1. Crack 2 eggs into a bowl and whisk.
  2. Mix through 2 handfuls of either or combination of chopped kale, grated zucchini, chopped asparagus, parsley, basil, chopped mushrooms, tomato, spring onion, with diced garlic.
  3. Add a dash water, pinch salt and cracked pepper and mix further.
  4. Heat 1 tablespoon coconut oil to medium heat, in a frying pan.
  5. Add the omelette mixture and cook until you can see the bottom of the omelette is cooked enough to get a spatula underneath and flip.
  6. Continue to cook to desired consistency.
  7. Drizzle with olive oil and serve with fresh seasonal herbs and avocado.
