Healthy Rice Paper Rolls

I just felt like something different tonight. I made these quick and easy rice paper rolls with leftovers for tomorrow of course 😜
I really enjoyed the freshness of this after breaking away from the more winter type meals. I experimented with a dipping sauce too.  A good way to use up leftover ingredients in the fridge which I’m all about 🙏🏽



  • 3 tbsp almond butter (could use peanut if you wanted, almond less reactive)
  • 1 Tbsp coconut aminos sauce
  • pinch of stevia (the real kind)
  • juice of one lemon or lime
  • 2-3 tbsp warm water


  • Shredded leftover organic roasted chicken
  • coriander
  • lettuce
  • carrot
  • cucumber
  • capsicum
  • spring onion
